Swell Nice Cream Sandwich!

Looking for a guilt-free and delicious dessert that's perfect for these hot summer nights?  Try our dairy-free and gluten-free coconut ice cream sandwich!  

Crust:  

  • 1 Swell Bite for each side of sandwich (2 Bites per side for thicker crust)

Flatten bites to make each side of the sandwich and set aside.

Ice Cream:

  • 1 can full fat coconut milk
  • 2 pitted dates
  • 1/4 Cup almond butter
  • Seeds for 1/2 vanilla bean'
  • 1/4 tsp sea salt

Mix all ingredients together in a high-speed mixer.  Put in freezer for ~3 hours (until frozen).  Serve when ready!
